Tomato Caprese

Ingredients
  

  • 1 large ripe tomato
  • 1 handful of basil
  • 1 tbsp fresh herbs chives, oregano, etc
  • 1 ball fresh mozzarella
  • olive oil
  • sea salt and cracked pepper

Method
 

  1. Slice the tomato in ¼ in slices.
  2. Slice the mozzarella in ¼ in slices.
  3. Layer the tomato, mozzarella, and a single basil leaf in an alternating pattern around the edge of the plate.
  4. Finely chop additional herbs and sprinkle evenly over top.
  5. Drizzle about a Tbs of olive oil over the whole dish.
  6. Top with sea salt, pepper, and additional basil leaves if desired.
