Tomato Caprese

Enjoy an authentic Italian delight straight from the garden!

Ingredients
  

  • 1 large tomato
  • 1 handful fresh basil leaves
  • 1 tbsp chopped fresh herbs (chives, oregano, etc)
  • 1 ball fresh mozzarella
  • 1-2 tbsp olive oil
  • sea salt and cracked pepper

Method
 

  1. Slice the tomato into 1/4 inch slices.
  2. Slice the mozzarella into 1/4 inch slices.
  3. Layer the tomato, mozzarella, and a single basil leaf in a pattern around the edge of a plate.
  4. Finely chop additional herbs and sprinkle evenly over top.
  5. Drizzle about a tbsp of olive oil over the whole dish.
  6. Top with sea salt and cracked pepper, and additional basil leaves if desired.
